Gluten Free Air Fryer Pickles with Creamy Dairy Free Dill Sauce

Gluten Free Air Fryer Pickles with Creamy Dairy Free Dill Sauce

Yield: 4 Servings

Ingredients:

32 dill pickle slices or ovals

1/3 cup Gluten free flour

1/3 cup Gluten free panko bread crumbs

2 eggs

¼ tsp ground cayenne pepper plus a pinch for the sauce

¼ tsp salt

¼ tsp garlic powder

¼ cup fresh dill or 2 TBSP dried dill divided (half for breading and half for sauce)

2 TBSP pickle juice

1/3 cup plant-based mayonnaise

2 TBSP plant-based sour cream

 

Directions:

1.       Preheat the oven to 450 degrees. If your oven has an air fryer setting set it to that. If you don’t have an air fryer, you can use a metal cooling rack on top of a baking sheet as long as it is oven safe. Follow your air fryer directions if using the separate air fryer appliance.

2.       On a large, paper towel-lined plate or sheet pan, lay out the 32 pickles slices to get rid of some of the liquid.

3.       Set out 3 shallow dishes for a dredging station.

4.       In the first of the 3 shallow dishes, combine the GF flour and salt.

5.       In the second of the 3 shallow dishes, beat the 2 eggs and mix with the pickle juice.

6.       In the third of the 3 shallow dishes, combine the GF Panko bread crumbs and half of the dill.

7.       Dredge in the GF flour, then gently shake off the excess.

8.       Dredge in the egg mixture next.

9.       Dredge in the Panko bread crumbs insuring that each pickle is coated fully. Add more bread crumbs to that dish if necessary.

10.    Put the pickles onto the pan you will be using or into your air fryer, then cook for 20-25 minutes.

11.    While the pickles are cooking, make your creamy dill sauce.

12.    To make the sauce, combine the mayonnaise, sour cream, a pinch of cayenne, garlic powder, and the other half of the dill. Stir to combine.

13.    Once the pickles are cooked, allow them to cool for a couple of minutes, then serve.
