Egg Scramble with Greens, Sausage, and Plant-Based Cheese

Ingredients:

1 TBSP Light Olive Oil or Plant-Based Butter

4 Cage Free Brown Eggs, beaten

2 Sausage Patties (Plant-based or whatever sausage you prefer)

1 cup Tender Baby Greens (Power Greens, Baby Spinach, Baby Kale are all good choices)

1/3 cup Shredded Plant-based cheese (such as Mozzarella, Cheddar, Mexican Blend, Pepper Jack)

1/8 tsp Sea Salt

1/8 tsp Ground Black Pepper

*You can serve with fruit, tomato slices and/or avocado slices.

Directions:

1.       Heat oil or plant-based butter in a 10” skillet.

2.       Brown sausage patties on both sides and cook through. Then set aside, while you wilt the greens in the same skillet.

3.       Chop the sausage patties into bite-size pieces, then add to the skillet with the greens.

4.       Once the greens are wilted, add the eggs, cheese, salt, and pepper.

5.       Using a spatula every minute or so, move the eggs around so all ingredients combine as they cook.

6.       Divide the egg scramble between two plates, and serve with salsa, avocado slices, and/or tomato slices.
