Slow Cooker Chicken Tikka Masala

Ingredients:
3 lb chicken breasts, boneless and skinless
1 onion, diced
1 TBSP garlic, minced
1 tsp sea salt
1-1/2 TBSP Garam Masala
½ tsp Paprika
1 can Tomato Paste
1 28 oz can Diced Tomatoes
1 15 oz can Coconut Milk (I use light)
Cilantro for garnish
Basmati or Cauliflower Rice for serving
Directions:
1. Spray the slow cooker with olive oil spray so the clean-up is easier.
2. Put the chicken in the bottom of the slow cooker.
3. Cover with diced onion, garlic, salt, Garam Masala, and paprika.
4. Combine the tomato paste, diced tomatoes, and coconut milk in a bowl.
5. Pour the tomato paste, tomatoes, and coconut milk over the chicken.
6. Cook on low for 5 hours.
7. Remove the lid and use tongs and a fork to break up the chicken into smaller pieces. Cover and cook for 30 minutes.
8. For the next 30 minutes, cook uncovered so the sauce thickens slightly. If you are making rice, this is a good time to do that. This is also when I chop the cilantro for garnish.
9. To serve, put rice or cauliflower rice into each dish (I use shallow bowls), then top with Chicken Tikka Masala, and garnish with chopped cilantro.
