Gluten Free & Vegetarian Pizza with Balsamic Onions and Roasted Asparagus

Gluten Free & Vegetarian Pizza with

Balsamic Onions and Roasted Asparagus

Yield: 4-6 servings

Total Time: 25 minutes

 

Ingredients:

1 10” store-bought Gluten Free Pizza Crust

1 TBSP Extra Virgin Olive Oil plus a little more for the outer perimeter of the crust

1 TBSP Balsamic Vinegar

1 Small Sweet Onion sliced in crescent shape

6 Spears Roasted Asparagus, cut into 1-1/2 inch pieces (I usually roast in olive oil the night before, and have leftovers to use for the pizza the next day)

6 Cloves of Garlic Roasted (I roast them with the asparagus)

2 sprigs of fresh thyme or 1 tsp of dried thyme

1 Roma Tomato cut in half vertically, then sliced in half moon shape

4 oz can tomato sauce or pizza sauce

1/3 cup shredded mozzarella cheese (I used plant-based mozzarella in the one pictured)

1 tsp Italian Seasoning

Salt and Pepper to taste for balsamic onions

1 TBSP fresh parsley, chopped and/or fresh chives, minced

Crushed Red Pepper and Parmesan (I used plant-based in this one) for serving

 

Directions:

1.       Preheat the oven according to your crust’s package directions. (Mine is 410 degrees)

2.       Heat a 10” skillet on medium heat with olive oil.

3.       Put the onions and thyme sprigs into the skillet and cook until soft and translucent.

4.       Add salt, pepper, and Italian Seasoning to the skillet.

5.       Add the balsamic vinegar to the skillet and cook for 3 more minutes or until most of the balsamic vinegar is absorbed by the onions. Remove the thyme sprig.

6.       Put the pizza crust onto a pizza pan or sheet pan.

7.       Spread the tomato sauce onto the crust leaving a half inch perimeter. Rub a little olive oil around the edge to help it brown.

8.       Add the slices of tomato to the pizza.

9.       Add the balsamic onions to the pizza next.

10.   Add the roasted asparagus and garlic cloves to the pizza.

11.   Top with shredded cheese.

12.   Bake for 10 minutes (or according to directions on your pizza crust).

13.   Take the pizza out of the oven once it is done to your liking and top with chopped parsley and minced chives if desired.

14.   Top with parmesan cheese and crushed red pepper or offer at the table for your diners.
