Gluten Free Fish Nuggets

Ingredients:
1 lb mahi-mahi, skin removed and cut into nuggets
1 cup grapeseed oil or other oil that is good for frying
1/3 cup each of GF 1-to-1 flour and GF cornmeal
1 tsp each sea salt and blackening seasoning or cajun seasoning
Directions:
First I pour the oil into a 12” skillet and turn the heat to low just to get the oil heating up.
While the oil is heating up a little, I cut the fish into nuggets.
Place the flour and cornmeal in a shallow dish. Add the salt and blackening or cajun seasoning, then mix to combine.
Turn up the heat to medium high (on my stove top I put it on 8 out of 10)
Add the fish nuggets to the seasoned flour/cornmeal mixture. Roll the nuggets around in the mix to coat them completely.
Once the oil is really hot, carefully (I use tongs) add all the nuggets.
After about 3-4 minutes, flip the nuggets over to cook the other side. Sometimes at this point I turn the heat down a little (6 out of 10).
After another 2-3 minutes at the most, the nuggets will be ready. Remove them to a plate or platter, then season with a little more salt if desired.
*I love serving these nuggets in GF tortillas as tacos with my Roasted Heirloom Tomato Salsa, Vegan Mexican Coleslaw, pickled jalapenos, and diced avocado.
*These are a great recipe to get your kids to eat fish. Serve with some GF mac and cheese and they will love them!
