Gluten Free Fish Nuggets

Gluten Free Fish Nuggets

Yield: 4 servings

Ingredients:

1 lb mahi-mahi, skin removed and cut into nuggets

1 cup grapeseed oil or other oil that is good for frying

1/3 cup each of GF 1-to-1 flour and GF cornmeal

1 tsp each sea salt and blackening seasoning or cajun seasoning

Directions:

  1. First I pour the oil into a 12” skillet and turn the heat to low just to get the oil heating up.

  2. While the oil is heating up a little, I cut the fish into nuggets.

  3. Place the flour and cornmeal in a shallow dish. Add the salt and blackening or cajun seasoning, then mix to combine.

  4. Turn up the heat to medium high (on my stove top I put it on 8 out of 10)

  5. Add the fish nuggets to the seasoned flour/cornmeal mixture. Roll the nuggets around in the mix to coat them completely.

  6. Once the oil is really hot, carefully (I use tongs) add all the nuggets.

  7. After about 3-4 minutes, flip the nuggets over to cook the other side. Sometimes at this point I turn the heat down a little (6 out of 10).

  8. After another 2-3 minutes at the most, the nuggets will be ready. Remove them to a plate or platter, then season with a little more salt if desired.

    *I love serving these nuggets in GF tortillas as tacos with my Roasted Heirloom Tomato Salsa, Vegan Mexican Coleslaw, pickled jalapenos, and diced avocado.

    *These are a great recipe to get your kids to eat fish. Serve with some GF mac and cheese and they will love them!
