Gluten Free Vegan Patty Melt

Gluten Free Vegan Patty Melt

Ingredients:

1 lb plant-based ground meat (check for the GF designation), divided into four squares and pressed into patties with your hands

4 slices of plant-based cheese (cheddar, provolone, American are all good options)

8 slices of gluten free sandwich bread

1 small, sweet onion such as Vidalia, peeled and sliced in thin crescent-moon shape

2 TBSP plant-based butter or olive oil

¼ tsp dried thyme

¼ tsp sea salt

¼ tsp ground black pepper

 

Directions:

1.       Get a 10” skillet warm on medium-high heat, then melt ½ TBSP of the plant-based butter or olive oil. Once warm, add the sliced onion, salt, pepper, and thyme to the skillet.

2.       While the onion cooks, season your plant-based patties with a little salt and pepper.

3.       Heat a 12” skillet (preferably with a cover) on medium-high heat with 1 TBSP of plant-based butter or olive oil.

4.       Once the skillet is warm, add the four patties.

5.       While the onions and patties cook, get your plant-based cheese onto the 8 slices of GF bread. I put a half of a slice of cheese onto each slice of bread.

6.       After about 10 minutes, the onions should be caramelized and ready to divide between the four sandwiches.

7.       Once the patties are seared on both sides and cooked through (about 3 minutes per side), then add the patties on top of the onions for each sandwich and top with the other piece of bread to make up four complete sandwiches.

8.       Wipe the skillet from which the patties were just removed with a paper towel to remove excess moisture and liquid, then melt 1 TBSP plant-based butter or oil in that skillet. It will melt quickly since the skillet was already hot.

9.       Place all four sandwiches into the skillet, then put the remaining plant-based butter on the top slice of bread for each of the four sandwiches.

10.   Cook each side of the sandwich until browned and the cheese is melted. I find that putting the cover on the skillet helps speed up the process and melts the cheese more easily.

11.   Serve alongside roasted sweet potato wedges, fries, chips, or tater tots.

*If you have leftover sandwiches, I recommend wrapping each sandwich into a square piece of aluminum foil, then reheating in the oven on 350 degrees for about 15 minutes when you are ready for some awesome leftovers.
