Vegetarian Stir Fry

Ingredients:
2 lb meatless ground meat replacement (like Beyond or Impossible)
1 bag stir fry vegetables of your choice (I usually get the ones that include the sauce, but I only use the vegetables so I can make sure to control the sodium content and avoid gluten)
1/2 cup shredded carrot
2 stalks celery, chopped
8 oz sliced mushrooms (white or bella)
2 TBSP low sodium Tamari
1 TBSP light olive oil or grapeseed oil
1/2 TBSP sesame oil
1 garlic clove, minced
1/2 tsp ground black pepper
1/4 tsp crushed red pepper
Directions:
Heat olive oil in a wok or 12” skillet.
Crumble and brown ground meat replacement.
Add the vegetables and cook for a few minutes until they begin to soften.
Add the Tamari, sesame oil, garlic, black pepper, and crushed red pepper. Cook for a few more minutes until the vegetables are cooked to your liking.
Serve with Tamari at the table so people can add more if they like.
