Vegan Cucumber and Avocado Soup

Vegan Cucumber and Avocado Soup

Yield: 2 servings

Prep Time: 5 minutes

 

Ingredients:

1 Avocado, peeled and cubed

1 Large Organic Cucumber, peeled, seeded, and cubed

½ cup Plant-Based Yogurt or Sour Cream

Juice of 1 Lime

¼ cup Fresh Dill

1/8 tsp Sea Salt

 

Garnish options:

Diced Tomato, Sprigs of Fresh Dill, Snipped Fresh Chives, Micro greens, Dollop of Yogurt/Sour Cream, Cubed Avocado, and/or Cubed Cucumber

 

Directions:

1.       Puree all ingredients in a blender. Taste to check seasonings. Adjust seasoning if necessary.

2.       Chill in the refrigerator for 30 minutes or up to 2 hours.

3.       Divide the soup into two shallow bowls.

4.       Top with desired garnish option(s) and serve.
