Colorful Potato Salad
Yield: 8 servings
Prep Time: 15 minutes
Cook Time: 45 minutes (includes 30 minutes to cool)
Total Time: 30 minutes (plus 1 hour to chill in the refrigerator)
Ingredients:
2 lb petite medley potatoes (purple, red, yellow)
2 stalks celery, diced
1 shallot, minced
2/3 cup mayonnaise (can be vegan)
1 TBSP Dijon mustard
2 TBSP fresh dill
½ tsp each sea salt and ground black pepper
Directions:
1. In a large pot cover the potatoes with water, put ½ tsp sea salt in the pot, then bring to a boil. Let boil for 10-12 minutes or until they are fork tender. Drain and set aside to cool.
2. Once the potatoes are room temp (about 30 minutes), combine with the rest of the ingredients in a large bowl. Stir to combine. Check seasonings and adjust with more salt and pepper if needed. Cool in the refrigerator for at least one hour before serving.
