Pulled Pork Soup with Healthy Greens
(for gluten free and dairy free, be sure to check all packages)

Ingredients:
8 cups Chicken Stock, low sodium chicken broth, or chicken/pork bone broth
3 TBSP Olive Oil
2 cups carrots, peeled and diced
2 cups onions, diced
2 cups celery, diced
2 garlic cloves, peeled and minced
1 14.5 oz can diced tomatoes
4 cups cooked pulled pork
2 cups torn kale leaves, and/or collard greens
1 tsp each salt, pepper, onion powder, and dried Italian herbs
Fresh basil or parsley, if desired for garnish
Directions:
In a large soup pot, heat the olive oil at medium-high heat for one minute.
Add the carrots, onions, and celery with the tsp of salt.
Add in the tomatoes, pulled pork, black pepper, onion powder, Italian herbs, and chicken stock or broth, then bring to a boil.
Let the soup boil for a few minutes, then reduce to low and add the greens. Let it simmer for 15 minutes.
To serve, ladle soup over cornbread or crackers or with your favorite bread; otherwise it is terrific as is if you are watching carbs or calories.
Garnish with fresh basil or parsley if desired.
Suggestions and ideas:
Other great additions: squash or zucchini (just add during the last 15 minutes)
This is a great make-ahead meal and can be kept in your freezer for up to 6 months.
This recipe comes in at 320 calories without the crackers or cornbread. It’s a great low calorie lunch or supper.
