Slow Cooker BBQ Chicken

Ingredients:
5 pounds boneless, skinless chicken breast (frozen is fine)
1 large, sweet onion, chopped
1 jar BBQ sauce plus another jar for serving (check for GF designation on bottle; I use Austin’s Own)
½ bottle Light Italian salad dressing (check for GF designation on bottle)
¼ tsp hot sauce (check for GF designation on bottle)
¼ cup honey
2 cloves minced garlic (if using packaged minced garlic check for the GF designation)
*GF buns or slider buns for serving
Other serving suggestions: sliced onion, sliced dill pickles
Directions:
1. Spray the large oval slow cooker with cooking spray (check for GF designation on can).
2. Place the chicken in the slow cooker, then top with onions and garlic.
3. Pour the BBQ sauce, Light Italian salad dressing, hot sauce, and honey over the chicken and onions evenly.
4. Cook on low for 7 hours, then shred the chicken (I use tongs and a large meat fork).
5. Cook for one more hour on low.
6. Serve on a GF bun. I suggest having a condiment bar around the slow cooker so people can serve themselves (GF buns, sliced dill pickles, sliced sweet onion)
*Serve on a GF bun, in a baked potato, or over Roasted Sweet Potato Mash
