Roasted Potatoes

Ingredients:
2 lb Yukon Gold Potatoes
1 Shallot, minced
2 TBSP Extra Virgin Olive Oil
1 tsp Garlic Powder
1 tsp Ground Black Pepper
1 tsp Sea Salt
1 tsp Italian Seasoning
¼ tsp Red Pepper Flakes
Fresh Parsley for garnish if desired
Directions:
1. Preheat the oven to 375 degrees.
2. Clean and chop the potatoes into bite size pieces. Spread them onto a sheet pan that you have sprayed with cooking spray or lined with aluminum foil for easy clean up.
3. Scatter the minced shallot atop the potatoes.
4. Spread the olive oil on evenly so the seasoning adheres to the potatoes.
5. Add the garlic powder, salt, pepper, Italian Seasoning, and red pepper flakes.
6. Bake in the oven for 45 minutes.
7. Remove potatoes from the oven, then allow to cool for 5 minutes.
8. Garnish with fresh parsley if desired. Season with additional salt or pepper if needed.
