BBQ Chicken Nachos

BBQ Chicken Nachos

Ingredients:

2 servings of Slow Cooker BBQ Chicken (see Chicken & Turkey section of this website)

2 servings of corn tortilla chips (check packaging to be sure they are gluten free)

2 green onions, diced (green and white parts)

1 medium avocado, diced

1/4 cup of fresh cilantro chopped

1 cup plant-based mozzarella or Mexican blend cheese (like Daiya)

Directions:

  1. Preheat the oven to 375 degrees.

  2. Place the tortilla chips onto an aluminum-foil lined sheet pan, then top with Slow Cooker BBQ Chicken and the cheese.

  3. Bake in the oven for 10 minutes.

  4. Remove the sheet pan from the oven. Divide the nachos onto two plates and top each serving with green onions, avocado, and cilantro.
