Slow Cooker Chicken Cacciatore

Ingredients:
3 lb Chicken Breast, boneless and skinless
2 cans (15 oz each) Diced Tomatoes (I use no-salt added and check that the label says Gluten Free)
1 can (15 oz) Tomato Sauce (Check that the label says Gluten Free)
1 medium Onion or 3 Shallots, diced
1 clove Garlic, minced
2 Bell Peppers (I use 2 different colors, but use what you have)
1 package Fresh Cremini Mushrooms, sliced
1 tsp Dried Oregano
1 tsp Dried Basil
1 tsp Dried Italian Seasoning
1 tsp Garlic Powder
1 tsp Dried Parsley
¼ tsp Sea Salt
¼ tsp Ground Black Pepper
Fresh Parsley, chopped for garnish
Directions:
1. Add all ingredients into the slow cooker.
2. Cook for 4 hours on high, then for 2 hours on low.
3. Serve over gluten free pasta or rice.
4. Garnish with grated parmesan cheese and fresh parsley.
