Gluten Free Pizza with Chicken Sausage and Shallots

Ingredients:
1 10” store-bought Gluten Free Pizza Crust
1 TBSP Extra Virgin Olive Oil plus a little more for the outer perimeter of the crust
1 Link of Chicken Sausage, sliced in half, then into half moon shape
1 Shallot, cut in half, then into thin slices
1 Roma Tomato cut in half vertically, then sliced in half moon shape
4 oz can tomato sauce or pizza sauce
8-10 Pitted Kalamata Olives, sliced in half
8-10 Sliced Pepperoncini
1/3 cup shredded mozzarella cheese (I used plant-based mozzarella in the one pictured)
1 tsp Italian Seasoning
1 tsp Garlic Powder
1 TBSP fresh parsley, chopped
Crushed Red Pepper and Parmesan (I used plant-based in this one) for serving
Directions:
1. Preheat the oven according to your crust’s package directions. (Mine is 410 degrees)
2. Heat a 10” skillet on medium-high heat with olive oil.
3. Cook the sliced sausage for 5 minutes until browned on both sides.
4. Put the pizza crust onto a pizza pan or sheet pan.
5. Spread the tomato sauce onto the crust leaving a half inch perimeter. Rub a little olive oil around the edge to help it brown.
6. Add the slices of tomato to the pizza.
7. Add cooked sausage to the pizza next.
8. Top with shallots, pepperoncini, and Kalamata olives.
9. Top with shredded cheese.
10. Bake for 10 minutes (or according to directions on your pizza crust).
11. Take the pizza out of the oven once it is done to your liking and top with chopped parsley.
12. Top with parmesan cheese and crushed red pepper or offer at the table for your diners.
