Gluten Free Vanilla Cinnamon French Toast

Yield: 2 servings (easily doubled or even multiplied for a crowd)

Prep Time: 15 minutes

Cook Time: 7-8 minutes

Total Time: 22-23 minutes

 

Ingredients:

4 slices of Gluten Free Sandwich Bread (2 per person if making recipe for more people)

3 Large Eggs

½ cup Milk (I use unsweetened coconut-almond milk, but any milk will do)

1 TBSP ground Cinnamon

1 tsp vanilla

2 TBSP butter (I use plant-based butter)

¼ tsp sea salt

¼ tsp black pepper

 

Directions:

1.       In a shallow baking dish, beat your eggs, milk, cinnamon, vanilla, salt and pepper until combined.

2.       Place the bread in the baking dish to soak. I dredge both sides first, then let each side soak for 5 minutes.

3.       A few minutes before your bread is finished soaking, melt the butter in a 12” skillet on medium-high heat.

4.       Once the butter is melted and the skillet is hot, add the soaked bread gently shaking off the excess egg mixture before placing them into the skillet. Cook for about 3-4 minutes per side until the egg mixture is set, the bread has firmed up a little and browned.

5.       Serve with maple syrup, honey, and/or fresh berries. You can dust on a little powdered sugar if you like as well.
