Romantic Gluten Free Strawberry and Dark Chocolate Sheet Pan Pancakes
Yield: 8 servings (easily doubled for a crowd)

Ingredients:
8 servings of pancake mix prepared according to directions (I use Gluten Free such as Great Value, King Arthur, or Bob’s Red Mill)
6-10 strawberries, hulled so that the strawberries are shaped like a heart, then sliced into heart-shape slices
2 TBSP dark chocolate morsels (I use dairy free such as Enjoy Life)
1 TBSP butter to grease the sheet pan
1/2 tsp vanilla (check for GF designation)
Maple syrup for serving
Directions:
1. Preheat the oven to 400 degrees.
2. Prepare the pancake mix according to the package directions and mix well.
3. Grease the sheet pan. I used a smaller pan (10x13) and still had leftovers.
4. Pour the pancake mix evenly onto the sheet pan. Try to get the mix as level as possible.
5. I envisioned columns and rows before placing the heart-shaped strawberry slices, because I didn’t want to cut through the strawberries. I want the strawberries in the center of each slice of pancake.
6. Drop the dark chocolate morsels all over the pancakes so that every slice will have three or four morsels.
7. Cook in the oven until firm and golden (about 15 minutes).
8. Top with maple syrup and serve alongside scrambled eggs and bacon for a complete breakfast/brunch.
