Gluten Free “Meat”ball Pizza

Gluten Free “Meat”ball Pizza

With dairy free suggestions

Ingredients:

1 gluten free pizza crust

1/3 lb plant-based ground meat, rolled into small meatballs (about the size you would get with a melon baller)

¾ cup mozzarella or plant-based mozzarella cheese

½ small, sweet onion (like Vidalia), diced

1 green bell pepper, diced

¼ cup sliced, jarred, pickled pepperoncini peppers

1 small can tomato sauce

1 small can tomato paste

2 tsp extra virgin olive oil

1/8 tsp ground black pepper

A pinch of crushed red pepper

1/8 tsp each garlic powder and onion powder

1/8 tsp each dried basil, parsley, oregano, Italian seasoning

Fresh basil and parmesan for garnish

Directions:

1.       Preheat the oven according to package directions for the pizza crust.

2.       Heat 1 tsp of olive oil in a 10” skillet on medium high heat

3.       Once the skillet is warm add the meatballs.

4.       Brown the meatballs on each side. It will take about 4-5 minutes.

5.       Remove the meatballs to a small plate, then add the onion and green bell pepper to the skillet and cook until translucent. Turn off the eye once the onion and bell pepper are translucent.

6.       Place the GF pizza crust onto a sheet pan or pizza pan.

7.       In a small bowl combine the can of tomato sauce and tomato paste. Stir until combined. You will have sauce leftover if you are only doing one pizza. I find that this makes enough sauce for 2 pizzas. I use the leftover for pasta sauce or dipping sauce for GF bread if I don’t make a 2nd pizza.

8.       Put the remaining tsp of olive oil on the crust. I circle it out around the edge, then rub it in with my hands.

9.       Take a spoon and add the pizza sauce working from the center to the edges.

10.   Add half of the cheese, then the onions, bell peppers, and meatballs. Then add the pepperoncini.

11.   Top with the other half of the cheese.

12.   Bake according to package directions for pizza crust. Mine specifies 410 degrees for 8-10 minutes. I start checking it early and watch it carefully until it is done to my liking.

13.   Remove the pizza, top with parmesan or plant-based parmesan, more crushed red pepper flakes, and torn, fresh basil leaves.
