Simple Pan Seared Salmon

Yield: 4 servings

Prep Time: 1 minute

Cook Time: 10 minutes

Total Time: 11 minutes

Ingredients:

4 Four Oz. salmon filets (I prefer Coho since it has a milder flavor)

1 TBSP olive oil

1 TBSP plant-based butter

¼ tsp sea salt

¼ tsp black pepper

Juice of half a lemon

Directions:

1.       Heat olive oil and plant-based butter in a 12” skillet over medium high heat. While the skillet is heating up, season the salmon with salt and pepper.

2.       Once the skillet is hot and butter is melted, place salmon filets skin side up and cook for 5 minutes.

3.       Flip the salmon and cook the skin side for 4 minutes. Some people will like the fish at this stage, and other will want it to be cooked longer. I would avoid cooking it any more than a couple of minutes past this or it will be dry. Remember it continues to cook a little even after you remove it from the skillet.

4.       Just before you remove the salmon, squeeze the half lemon over all 4 filets.

5.       Serve with tartar sauce and a wedge of lemon. See the Sauces, Dressings, and Condiments section for my Vegan Tartar Sauce recipe.
