Fennel and Arugula Salad with Naval Oranges

Yield: 4 servings

Prep Time: 5 minutes

 

Ingredients:

1 pkg of Arugula

2 Naval Oranges, peeled and segmented (Supreme the orange is the technical term) *Blood Oranges or Cara Cara Oranges would be amazing as well

1 Fennel Bulb, cored and shaved thinly, and save a few fennel fronds for garnish

 

Directions:

1.       You can either put all the arugula into a large bowl to serve at the table or divide the arugula into four salad bowls.

2.       Top the arugula with the segmented orange and shaved fennel.

3.       Scatter fennel fronds on top for garnish.

*There are so many great options for dressing. Balsamic Vinaigrette, White Wine Vinaigrette, Champagne Vinaigrette, or Sherry Vinaigrette are all great options. See my Sauces, Dressings, and Condiments Section for recipes.
