Slow Cooker Lemon Herb Chicken Breasts with Baby Carrots

Slow Cooker Lemon Herb Chicken Breasts with Baby Carrots

Yield: 4-6 servings

Prep Time: 2 minutes

Cook Time: 4-6 hours

Total Time: Between 4 and 6 hours

 

Ingredients:

4 Boneless Skinless Chicken Breasts

1 lb bag Baby Carrots

1 Lemon, juiced

4 Cloves of Garlic, peeled and chopped

4 Sprigs each of Thyme and Rosemary

1 TBSP Extra Virgin Olive Oil

½ tsp Sea Salt

½ tsp Ground Black Pepper

 

Directions:

1.       Place baby carrots in the bottom of the slow cooker.

2.       Spread garlic over the baby carrots.

3.       Place the chicken breasts on top of the carrots and garlic.

4.       Add olive oil, lemon juice, and herbs, and seasonings.

5.       Set slow cooker to high for 4 hours.

6.       After 4 hours is over, if the chicken or carrots need more time to cook, then turn the slow cooker to low for another hour or two.  

7.       Serve with a salad, corn, or rice/cauliflower rice.
