Slow Cooker Corned Beef and Cabbage

Ingredients:
4 cups hot water
2 TBSP apple cider vinegar
2 TBSP sugar
½ tsp ground pepper
1 onion cut into quarters
3-1/2 lb corned beef brisket that comes with a spice packet
8 small Yukon Gold potatoes, scrubbed and cut into quarters
1 head cabbage cored and cut into wedges
6 carrots, cut into 1-inch slices
¼ cup chopped Italian parsley for garnish
Directions:
1. Combine water, apple cider vinegar, sugar, pepper, and onions in the slow cooker and stir.
2. Scatter potatoes and carrots as the next layer.
3. Place corned beef brisket and spice packet over the potatoes and carrots.
4. Cook on low setting for 4 hours.
5. Scatter the cabbage wedges over the top.
6. Continue cooking on low for 4 more hours.
7. Let the brisket rest, while dipping cabbage, potatoes, carrots, and onions into serving dish.
8. Carve the beef against the grain, then spoon the cooking liquid over the beef and vegetables.
9. Garnish with parsley.
