Blackened Mahi-Mahi with Peach Salsa

Blackened Mahi-Mahi with Peach Salsa

Blackened Mahi-Mahi Ingredients:

16 oz Mahi-Mahi cut into four 4 oz portions

2 TBSP Blackened Seasoning (you can make your own if you want, of course)

1 TBSP olive oil or plant-based butter

 

Salsa Ingredients:

2 peaches, pitted and diced

1 small avocado, peeled and diced

1 small tomato or a 5-6 cherry/grape tomatoes, chopped

1 small jalapeno, ribs and seeds removed, minced finely

1 small shallot, peeled and minced

1 clove garlic, peeled and minced

1 lime, juiced

1 TBSP fresh cilantro, chopped

1/8 tsp sea salt

1/8 tsp ground black pepper

A dash of the blackened seasoning you are using on the fish

 

Directions:

1.       Combine all salsa ingredients in a bowl then refrigerate while you prepare the Mahi-Mahi.

2.       In a shallow dish or large plate, spread 1 TBSP of the blackened seasoning. Place the Mahi-Mahi on the seasoning, then season the top side of the fish. Use your fingers to adhere the seasoning to the fish. If there is no skin on the other side, then season both sides.

3.       Heat the olive oil or plant-based butter in a 12” skillet on medium-high heat. Once the skillet is hot, then add the fish. After 3-4 minutes, carefully flip the fish and cook on the other side. Resist the urge to flip the fish if it is sticking to the skillet. It will release, just give it a few more seconds. The fish will be flaky when fully cooked.

4.       Remove the fish from the skillet and serve topped with the peach salsa.
