Gluten Free Air Fryer Fish Tacos

Gluten Free Air Fryer Fish Tacos

Ingredients:

¾ lb Flounder, sliced into strips (Mahi Mahi, Red Snapper, Grouper, Black Drum would also be great for this recipe)

½ cup Gluten Free Corn Meal

1 TBSP Light Olive Oil

8 Gluten Free Soft Corn Tortillas (Cassava Flour Tortillas are amazing as well)

½ tsp Blackening or Creole Seasoning

¼ tsp Black Pepper

¼ tsp Sea Salt

Optional Toppings:

Sliced Avocado (as pictured), Cilantro, Verde Salsa, Guacamole, Pickled Jalapenos, lime wedges, and/or *Vegan Coleslaw (as pictured, see Vegetarian section for this recipe)

 

Directions:

1.       Preheat air fryer or oven on air fryer setting to 390 degrees.

2.       Remove skin from fish, then slice into strips. Rub fish with olive oil and season with salt and pepper.

3.       Pour GF corn meal into a shallow dish. Season with blackening or creole seasoning, then combine with a fork.

4.       Dredge the fish strips in the corn meal. Be sure corn meal is coating the fish lightly, then place the fish on the air fryer pan/tray.

5.       Cook fish for 8-10 minutes.

6.       While the fish cooks, prepare the toppings.

7.       I warm my tortillas for about 30 seconds per side in a nonstick skillet, then place in a tortilla warmer or aluminum foil pouch to keep warm for serving. If your oven is available, you can warm the tortillas in a 200 degree oven for 10 minutes in an aluminum foil pouch.
