Gluten Free Turkey Marinara

 Gluten Free Turkey Marinara With Penne

Yield: 8 servings

Ingredients:

2 lb lean ground turkey

1 pkg penne or penne rigate (you could use fusilli, spaghetti or rotini if you prefer)

1 small sweet onion, chopped

1 bell pepper (whichever color you prefer or have on hand), chopped

8 oz sliced bella mushrooms

1 TBSP olive oil

2 cloves garlic, minced

2 jars marinara (I use Newman’s Own Tomato Basil)

1 small can tomato paste

1/4 cup red wine (pinot noir, cabernet sauvignon for example)

1 TBSP dried basil

1 TBSP dried oregano

1 TBSP dried Italian seasoning

1/2 tsp sea salt

1/2 tsp ground black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

Fresh basil, parmesan, and crushed red pepper for garnish

Directions:

  1. Heat olive oil in a large 12” skillet (preferably one which has a lid) on medium-high heat.

  2. Brown the ground turkey.

  3. Add the onions and bell pepper to the ground turkey. If there is a lot of water after browning the ground turkey, I remove the excess with a large spoon.

  4. Add water to a large pot and cook penne according to package directions.

  5. Turn the heat down to medium, then add the mushrooms to the skillet. Cover with the lid to speed up the process of softening the mushrooms. This will take about 5 minutes.

  6. Once the mushrooms are softened, create a small well in the middle of the skillet by pushing ingredients to the side to clear a spot to add the garlic. Cook the garlic in the well in the middle for about one minute, then stir to combine.

  7. Add the tomato paste and stir to combine, then add the wine. Allow to cook on medium for another minute.

  8. Turn the skillet head down to low and add the two jars of marinara and all of the spices and dried herbs. Keep stirring occasionally until the pasta is cooked to your liking.

  9. Drain your pasta, then put the pasta pot onto a trivet or spot on your stove top that isn’t hot.

  10. Add half of your turkey marinara sauce into the large pot, then add the drained pasta. Mix to combine. Add the rest of the turkey marinara sauce and stir to combine again.

  11. Top with fresh basil, and serve with parmesan and crushed red pepper at the table.
